Light Citrus Chicken Salad


It's summertime again. Time to show off that bod in some tropical, people-infested beaches. Yep. Beaches with real people. People, who will probably judge you if you failed to rock that flabby tummy and buns. *rolls eyes*




If you wanted to start eating clean or just plain hungry, I would recommend this easy peasy salad recipe. Not only will it satisfy you to the core, but a plate of this will immensely brighten your day as well.

I know that cutting off your carbs in one go is no easy task. Who said you have to sacrifice good and tasty food for the sake of getting fit though? Let's get cookin'.



Light Citrus Chicken Salad

Ingredients


4 chicken thighs (or breast)
4 teaspoons of mixed italian herbs (thyme, parsley, rosemary)
2 teaspoons cayenne
Salt and Pepper to taste

2 pieces lime
1/8 cup of Extra Virgin Olive Oil
Salt and Pepper

2 handfuls of blanched mushroom
4 cups arugula (or any greens you prefer)
2-3 tablespoons of feta cheese
10-12 pieces cherry tomatoes
15 pieces olives, cut in half

Procedure

1. Rinse chicken thoroughly and pat dry. In a bowl, combine herbs, salt, pepper and cayenne. Mix well.
2. Gently rub the mixture in your chicken thighs or breast. Set aside for at least 1 hour.
3. Roast chicken until golden brown.
4. To make the our citrus vinaigrette, we have to combine olive oil, lime and salt and pepper in a container with lid. Let out all your frustrations and shake that thing. Set aside.
5. Thoroughly wash those veggies. Blanch mushroom for 3 minutes in boiling hot water and immediately dip in a cold bath. This will stop the cooking process.
6. Put all the vegetables you have on hand in a big bowl and lightly drizzle the vinaigrette mixture. Toss.
7. Transfer to a clean plate. Top it of with roasted and definitely succulent chicken thigh and sprinkle with feta cheese. Enjoy!

**You can adjust the number of feta cheese you want to put in your plate.
Just remember that a piece packs a punch. Be careful. WHat I like to do is use
around 2-4 pieces and roughly mash them to even out the flavor.
